Stuffed Mushrooms 28.12.2007

These make for excellent, if slightly retro party-food… I love them.

Ingredients

  • A bag of button mushrooms (the tinier the better, as long as the stalk cavity will hold a bit of paste)
  • 100gms breadcrumbs
  • 4 anchovies (or more – or replace with a few capers to make this a vego dish)
  • 1 tablespoon parmesan
  • 1 handful parsley
  • 1 splash of red wine vinegar
  • 1 clove of garlic
  • Olive oil
  • Salt and pepper

Method

Whiz all the ingredients together in the food processor with enough oil to form a paste. Take stalks out of button mushrooms and stuff with paste.

Bake at 180 degrees for 15 minutes. Eat in copious quantities, with champagne.

The paste freezes reasonably well, too, so freeze any leftovers to use for next time.

Probably don't want to whiz all of the ingredients. Then you would have no mushrooms to stuff. I've eaten these, and they are yes very nice.
