Jodie's chicken, mushroom and sage pie 21.01.2009

This pie is Teh Awesome and comes from deep within the House of Onion. Very showy, very tasty, very ace.

Ingredients

  • 550g chicken thighs, roughly chopped (do not be seduced by the breast!)
  • ½ cup plain flour
  • 70g butter
  • 1 leek, well washed and finely chopped
  • 2 cloves of garlic
  • 200gms field mushrooms
  • 100gms swiss brown mushrooms (if there are no swiss browns, any tasty-type mushroom will do – 300gms all up)
  • 1 cup chicken stock
  • sage leaves (¼ – ½ cup, finely chopped – use more if you want – I like lots)
  • sea salt to taste
  • 2-3 sheets ready-rolled butter puff pastry (feel free to make your own (freak))
  • 1 egg

Method

Preheat your oven to 200C (390F for odd imperial types).

In a plastic bag (with no extra holes), toss the chicken in the flour.

Melt half the butter in a large frying pan or saucepan and brown the chicken well. Once done, set the cooked chicken aside.

In the same pan, throw in the remaining butter and then add the leek, garlic and mushrooms and fry on a medium heat for 5 minutes or until the leek is soft.

Add stock and stir until the mixture boils.

(Now's probably a good time to take the pastry out of the freezer for thawing).

Return the cooked chicken to the pan, add the sage and some salt, give it a stir and then turn down the heat to a gentle simmer for 5 - 10 minutes - or until the mixture thickens (keep stirring).

Remove the pan from the heat and allow it to cool a little.

Grease a large, deep pie dish (~20-25cm x 4cm deep, square, round whatevs) and line it with pastry - use water to join pieces of pastry if required.

Scoop the chicken mixture into the pie dish and brush the edges of the pastry with egg.

Lay another piece of pastry on top and press the edges firmly together (a fork is good here).

Trim the edges and make a couple of (decorative and functional) cuts in the top of the pie, then brush the top with more egg.

Put it in the oven for ~30 minutes (baste with egg at the half time siren) or until filling is heated through and the pastry is golden.

Serve with favourite pie accompaniment. Jodie's suggestion is mashed potato and I whole-heatedly agree.
