Ham glazed with fruit juice 22.12.2008
Mum has glazed a ham every Boxing Day for my entire life, but this is the first year I’ve done one. It’s incredibly easy and delicious. We fed forty people comfortably with a ham, ten baguettes, a bowl of lettuce and two huge lumps of cheese. Easiest catering ever.
Ingredients
- 1 large leg of ham
- A couple of dozen cloves
For the glaze
- 1 cup apple cider
- 1 cup pineapple juice
- 250 g soft brown sugar
Method
Preheat the oven to 220 degrees.
Remove skin from ham (this is like skinning a baby; I found it quite disturbing) and place ham fat side up in a heavy baking dish. Place in the oven for 30 minutes, and while it's in there, cook basting ingredients together in a small saucepan until sugar dissolves.
Take ham from oven and using a very sharp knife score the fat in a diamond pattern. Stud each diamond with a clove. Pour hot basting mixture over the top of ham and return to oven to cook for 20-30 minutes or until brown on top, basting every 10 minutes. Remove from oven and allow to cool.
