Greekish salad with Felafel 04.11.2008
A delicious bottom-of-the-fridge accident. I actually had to cut mould off the felafels, but I don’t think it’s necessary to go to such lengths to achieve greatness for this recipe.
Ingredients
- 2 lebanese cucumbers, chopped
- 2 ripe tomatoes, chopped
- A bunch of parsley, chopped
- A bit of mint, chopped
- 8-10 olives, squashed and pips removed
- A few cubes of feta (marinated worked really well for me)
- Maldon or Murray River salt (yes, I’m a $9-for-salt yuppie), pepper, good olive oil
- Six or seven pre-prepared felafels, cooked until hot and a bit crunchy
Method
Mix all the salad ingredients and dress with a good slug of olive oil, plus the salt and pepper. Crush up the felafels and mix them through the salad. Crumble the cheese over the top.
